This is a favorite passage meal on Yohelah. It's a great way to use up leftover fish and is excellent comfort food that's yummy with a hot and sweet Thai dipping sauce.

Rob's Fish Cakes

1 lb. fresh mahi mahi, troll caught
1-2 eggs, beaten
2 Tbsp. mayo
1 Tbsp. mustard
3/4 cup bread crumbs
1/2 tsp. black pepper
1/8 tsp. cayenne pepper
1/4 cup scallions or other onion, chopped small
1/4 cup green pepper, chopped small
1 Tbsp. butter

Poach or grill fish. Flake fish, add to remaining ingredients, and mix well. Pan fry in oil until brown on each side, about 3 minutes.
