This is a salad we ate a couple of times at our favorite steakhouse in Seattle (El Gaucho). I'll never make it exactly as delicious as they do, but this is a great use of tomatoes needing to be eaten before it's too late.

Gauch Mato Salad

tomatoes (beefsteak slices or anything chopped up is fine)
red onion
red bell pepper
feta or blue cheese
basalmic vinegar
olive oil

Chop tomatoes. Top with chopped red onion and red pepper. Crumble blue or feta cheese on top of tomatoes, then add a small amount of vinegar and oil. For presentation purposes, El Gaucho would serve this as beautiful slices of huge beefsteak tomatoes.
