This is the best beer battered fried fish ever. Kathy from the boat Killisnoo brought the recipe to a Perry Rendezvous in Port Ludlow. Her & Andy have a cabin on Killisnoo Island in Southeast Alaska and use this for fried fresh halibut. I've used wahoo and grouper in the tropics. It's great with any firm whitefish.

Kathy's Beer Battered Fish

Firm whitefish cut into 1/2" strips
Japanese breadcrumbs (Panko)

Batter:
1 cup flour
1 tsp. baking powder
1/2 tsp. baking soda
salt & pepper
1/2 tsp. Johnny's seasoning salt
1 bottle flat beer

Cube fish into 1/2" strips. Dip fish in batter, then roll in oriental breadcrumbs. Set on paper towel. Deep fry in 350 degree oil until crispy brown on the outside. The trick is to make sure the oil is really hot so they cook quickly and don't taste greasy.
