After our first year in Mexico it quickly became apparent that I was going to have to learn how to cook things we call "ethnic" at home. My friend Nicole's grandma is Greek and taught her how to make real Greek food. Nik was kind enough to spend an entire Sunday in her kitchen sharing secrets and recipes with me. This recipe, along with Tzatziki and Feta-Mezes make a great trio of apps for happy hour.

Pita Bread

1 pkg yeast
2 cups warm water
2 Tbsp sugar
1 tsp salt
3 Tbsp olive oil
5-6 cups AP flour

Proof yeast. Add salt, oil and 2 cups flour. Beat for a while. Let stand 5-10 minutes. Add 3 more cups of flour, then knead just until not sticky to counter. Put in oiled bowl and cover with plastic wrap. When dough is doubled flip over and let rest. Roll into 6 balls, stretch and roll into 1/4" thick rounds. Cover and let sit 1/2 hour. Bake at 450 about 5 minutes on each side.

For just four people I usually make a half size batch.
